  • 30 Grams ghee or butter
  • 2 Large Onions, chopped
  • 1 tbsp garlic -- minced
  • 1 tbsp ginger - grated
  • 400 Grams Tomatoes, canned, chopped
  • 1 tsp paprika
  • ½ tsp Ground tumeric
  • ½ tsp ground cumin
  • ½ tsp coriander
  • ½ tsp chilli powder
  • ¼ tsp cardamom
  • 1 whole bay leaf
  • Salt & Pepper to season
  1. Melt the ghee in a wok or large frying pan over a medium-high heat. Add the onions and garlic and ginger paste and stir-fry for about 5 minutes, until the onions are golden brown. Stir in the tomatoes, then add the paprika, turmeric, cumin, coriander, chilli powder, cardamom, bay leaf and salt and pepper to taste. Bring to the boil, stirring, then reduce the heat and simmer for 20 minutes, stirring occasionally.
  2. Leave Sauce to cool slightly, then remove the bay leaf and pour the mixture into a food processor or blender and whizz to a smooth sauce.
