  • 2 Tbs olive oil
  • 1 kg chicken drumsticks, or skinned chicken pieces
  • Cooking Spray
  • 500 g mushrooms, sliced 1" thick
  • 2 cloves garlic, minced
  • 2 Tbs all-purpose flour
  • 1 cup water, divided
  • 1 cup dry red wine
  • 30 g onion soup mix, (1 envelope)
  • 2 Tbs dried parsley
  • ¼ tsp dried oregano
  1. Heat oil over medium-high heat in a large skillet. Add chicken; cook until lightly browned, turning once. Transfer chicken to an 11 x 7 inch baking dish coated with cooking spray. Add mushrooms and garlic to skillet; cook over medium-high heat until tender, stirring occasionally. Combine flour and 2 tablespoons water, stirring until smooth. add remaining water, wine, soup mix, parsley, and oregano; stir well. Stir flour mixture into mushroom mixture. Cook over medium heat until slightly thickened. Spoon mushroom mixture over chicken. Cover and bake at 350 for 1 hour.
