Prep time: 
  • 2 Whole aubergines, thickly sliced (eggplants)
  • 3 Tbs oil
  • 1 Whole lemon, juice of
  • 1 Tbs thyme, chopped
  • 1 Tbs basil, chopped
  • salt, to taste
  • pepper, to taste
  1. Mix the oil, lemon juice and herbs. Add the sliced aubergine and toss, making sure it gets well coated.
  2. Leave to stand for 30 minutes Season with salt and pepper. (If you prefer you can add the salt& pepper to the marinade).
  3. Cook on a hot top or a grill approx 5 mins each side, until chargrilled.
