  • ½ tsp fennel seed
  • 1 Whole Cinnamon Quill
  • 1 Whole star anise
  • 800 Grams Tomatoes. skinned
  • 1 Whole Onion Chopped
  • 60 ML malt Vinegar
  • 50 Gram Brown Sugar, firmly packed
  1. Tie fennel seeds, cinnamon quill and star anise together in a piece of muslin cloth or new Chux.
  2. Combine remaining ingredients in a large saucepan, add spice bag and bring mixture to the boil, then reduce heat to low-medium and simmer for 40 minutes or until the sauce has thickened.
  3. Cool slightly. Remove and discard spice bag.
  4. Carefully pour the mixture into a 750ml (3 Cup) sterilised bottle or jar
  5. Cool completely.
