  • 500 g Kangaroo Topside
  • 3 Tbs Light olive Oil
  • 1 clove garlic, crushed
  • 2 tsp ginger, sliced
  • 1 cup celery, sliced
  • 1 small Red Capsicum, Cut in strips
  • 250 g broccoli florets, blanched
  • 3 tsp cornflour
  • 1 Tbs sherry
  • ½ cup water
  1. Freeze meat until firm but not solid, then slice meat thinly against the grain.
  2. Heat 2 tablespoons of the oil in a wok or fry pan, add half of the meat and stir fry until brown. Transfer to a plate and cook remaining meat and remove.
  3. Heat extra oil in wok, add garlic, ginger, shallots, celery, pepper and broccoli and stir fry for 2-3 minutes. Blend cornflour with soy sauce, sherry and water in a small container and add to wok with meat. Stir fry until mixture thickens.
  4. Serve immediately over steam or boiled rice or cooked noodles
