  • 600 g kangaroo fillet, cubed
  • 1 tsp Cumin
  • 1 tsp paprika
  • 1 tsp black pepper
  • 1 tsp curry powder
  • 3 cloves garlic, freshly crushed
  • 200 ml red wine
  • salt
  • 1 Tbs olive oil
  • 200 ml yogurt, 1 Tub
  • 1 whole Lebanese cucumbers, grated
  • vinegar
  1. To make marinade mix equal parts of cumin, paprika, black pepper and curry powder (a teaspoon to dessertspoon of each depending on your desire for spice!)
  2. Rub spice mix over the meat with a generous amount of crushed garlic a drizzle of olive oil and enough red wine to cover the meat.
  3. Marinate for 4 to 8 hours.
  4. Make Tzadziki by grating the flesh of a 'Lebanese' cucumber and squeezing out liquid. Mix into yoghurt with a little salt, pepper, crushed garlic, a little vinegar and drizzle of olive oil.
  5. Toss marinated meat around in a skillet or pan with some more oil until cooked. Grill the pita making sure not to over do it. Place meat, shredded lettuce, slices of tomato and onion and Tzadziki on pita and roll!
