Lime and Ginger Prawn Kebabs

Ingredients
  • 2 tsp sesame oil
  • ¼ cup lime juice
  • 2 shallots, chopped
  • 2 cloves garlic, chopped
  • 1 Tbs grated fresh ginger
  • ½ cup coriander leaves
  • 1 tsp paprika
  • ½ cup olive oil
  • 48 raw green prawns, tails intact
Instructions
  1. Place all ingredients, except prawns, into a blender.
  2. Season with salt and pepper.
  3. Blend until smooth.
  4. Coat prawns with marinade.
  5. Cover and marinade in the fridge for 1-2 hours.
  6. Thread prawns onto 16 soaked bamboo skewers.
  7. Grill on the barbeque for 2-3 minutes each side until prawns turn pink
