Ingredients
  • 1 clove garlic
  • 1 small onion
  • 100 g mixed mushrooms
  • 1 Tbs oil
  • 1 tsp chopped fresh thyme leaves
  • ½ cup natural yogurt
  • 2 Tbs chopped chives
  • 1 Tbs chopped parsley
  • ½ tsp salt
  • Pepper
Instructions
  1. Crush, peel and finely chop garlic. Peel and finely chop onion.
  2. Wipe mushrooms, then trim and slice. Heat oil in a saucepan and sauté onion and garlic for 5 minutes or until onion is clear.
  3. Add mushrooms and thyme and cook for about 5 minutes, making sure any liquid evaporates.
  4. Add yogurt, chives and parsley and bring to the boil. Season with salt and pepper and serve hot.
