  • 4 medium mangos, chopped
  • 180 ml port
  • 2 large onions, chopped
  • 1 cup raisins, chopped
  • 2 tsp ginger, fresh,chopped
  • 2 small chiles, red. finely chopped
  • 2 cups sugar
  • 3 cups vinegar, Brown
  • 2 tsp mustard seed, Yellow
  1. Combine mangoes in large saucepan or boiler with remaining ingredients, stir constantly over heat without boiling until sugar is dissolved. Bring to the boil; reduce heat, simmer, uncovered, for about 1½ hours or until chutney is thick. Chutney will need to be stirred occasionally towards the end of cooking time. Pour into hot, sterilized jars; seal when cold.
