Marsala Pork Fillets

  • 500 Grams pork fillets (4-5 oz each)
  • 1 tsp olive oil
  • 1 clove garlic, minced
  • 1 Cup tomato, seeded and chopped (1 cup)
  • 170 Gram fresh small mushroom caps
  • ⅓ cup dry Marsala wine
  • 2 Tbs tomato paste
  • 2 Tbs chopped fresh basil
  • ⅛ tsp white pepper
  • 1 Tbs water
  • 2 tsp cornstarch
  1. Spray 10-inch nonstick skillet with cooking spray, heat on medium-high heat. Add pork fillets, cook 10 minutes or until browned on both sides, turning once.
  2. Cover and cook an additional 5-10 minutes or until pork reaches an internal temperature of 160ºF. Remove pork, cover to keep warm.
  3. Add oil to skillet, sauté garlic, remove. sauté mushrooms and remove.
  4. Deglaze pan with Marsala and reduce to approx half
  5. Add tomato, tomato paste, basil and white pepper; cook, covered, 3 minutes. If not thick enough add combined water and cornstarch to sauce. Cook over medium heat until sauce is thickened, stirring constantly.
  6. Serve sauce over fillets.
