  • 2 Tbs Olive Oil
  • 1½ kg veal shank, ½" thick
  • Flour
  • 1 Very Large Onion, Chopped
  • 1 Can Italian Plum Tomato, crushed
  • 1¾ cups Chicken Broth
  • 1 cup Dry White Wine
  • 6 Fresh Basil Leaves
  • ½ tsp Lemon Peel, crated
  • 2 Tbs Fresh Parsley, minced
  • 2 Clove Garlic, minced
  • ½ tsp Lemon Rind, grated
  1. Heat oil in heavy extra-large deep frying pan over medium-high heat. Dredge shanks in flour; shake off excess. Add to frying pan and cook until brown, turning occasionally, about 12 minutes. Transfer shanks to bowl.
  2. Reduce heat to medium-low. Add onion and garlic and saute until tender, about 4 minutes. Return shanks and any liquid in bowl to pan. Season shanks with slat and pepper. Add tomatoes, broth, wine, basil and lemon peel to pan. Cover partially and simmer until veal is very tender and begins to fall off bones, about 2 hours.
  3. Ladle into bowls and serve with Gremolata
  4. To make Gremolata
  5. Combine all ingredients in a small bowl.
