  • ¼ cup Butter
  • 3 Tbs Flour
  • ½ tsp salt
  • 1 tsp dry mustard
  • 1 pinch cayenne
  • 1⅓ cups milk
  • ½ tsp onion, grated
  • 1½ cups oyster
  • 2 Tbs lemon juice
  • ½ tsp worcestershire sauce
  • 2 slices bread, buttered and cut into bread sticks
  1. Melt butter in a saucepan and stir in the flour,salt, mustard and cayenne. Add milk a little at a time stirring until it is smooth and cook on a low heat. Stir until the sauce thickens remove the pan from the heat and add the grated onion, lemon juice and Worcestershire sauce.
  2. Drain any liquid from the oysters and fold them into the sauce. Pour all into individual small casseroles.
  3. Cut crusts from several slices of bread. Butter the slices and cut into thin strips. Place them on top of the casseroles.
  4. Back at 190 degrees Centigrade for 15 min until bread is faintly browned, serve with lemon wedges.
  5. You can make this recipe with baby mussels but cook the mussels first.
