Peppered Barramundi Steaks

Prep time: 
  • 5 fillets Barramundi, (skinless & boneless)
  • 2 tsp black peppercorn, freshly cracked
  • 60 g Butter
  • 1 Sprig fresh oregano
  • 2 tsp green peppercorns
  • Sea salt
  • 2 Tbs cognac
  • 2 Tbs cream, thick
  1. Press cracked black pepper gently into each side of the fish portion. Lightly baste fish portions with a small amount of melted butter and place under a hot grill until cooked. Turn half way through to brown lightly and evenly on both sides.
  2. Heat small quantity of butter gently in a frying pan without allowing it to darken too much. Add the oregano and green peppercorns and allow to infuse in the warm pan. Add sea salt to taste. Pour in the Cognac and light with match to flambé. Add the cream to the pan and heat to just below boiling point.
  3. Pour sauce over fish and serve. Ideal with Provencale potatoes and steamed fresh green beans.
