  • 750 g Potato, unpeeled but scrubbed
  • ½ cup Spring Onions, sliced
  • ¼ cup Self-rising Flour
  • 1 Tbs Fresh Lemon Thyme
  • 1 Egg
  • 1 Extra Egg White
  • Freshly Ground Pepper
  • 2 tsp Olive Oil
  1. Grate the potatoes using a food processor or coarse grater. Using your hands, squeeze potatoes to extract as much moisture as possible. Combine grated potato with onions, flour, thyme, egg, egg white and pepper. Mix well, adding a little more flour if mixture seems to be to we (this depends on how much water you have been able to squeeze from potatoes).
  2. Heat a heavy based frying pan and brush with olive oil. Cook tablespoons of potato mixture over a moderate heat, turning to brown both sides. Keep pancakes warm while cooking the rest.
