Ingredients
  • ¾ cup granulated sugar
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground cloves
  • 2 large eggs
  • 4 cups chopped pumpkin or, 1 Can LIBBY'S 100% Pure Pumpkin(425 ml.)
  • 1 can Evaporated Milk, (350 ml.)
  • unbaked 9-inch (4-cup volume) deep-dish pie shell
  • cream, Whipped (optional)
Instructions
  1. Cook the chopped pumpkin until soft and then mash and push through a sieve to give a smooth textured pumpkin filling.
  2. Mix sugar, salt, cinnamon, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.
  3. Pour into pie shell.
  4. Bake in preheated 220° C. oven for 15 minutes. Reduce temperature to 176° C.; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving.
