Ingredients
  • ½ Kai Choy, Any Choy works
  • 1 Carrot, sliced
  • 5 florets Cauliflower, cut into small pieces
  • 200 g snow pea pod, fresh, strings removed
  • 1 small green capsicum, cut into wedges
  • 5 button mushrooms
  • 4 Chinese Mushrooms, dried, soaked and drained
  • 2 abalone mushrooms
  • 4 straw mushrooms
  • 2 slices ginger
  • 1 tsp corn flour, mixed thoroughly with water
  • 1 Tbs water
  • 3 Tbs vegetable oil
Seasoning Ingredients
  • 1 tsp chicken stock, granulated
  • 2 Tbs oyster sauce
  • 100 ml vegetable stock
Instructions
  1. Boil water and add in 1 tablespoon of oil. Scald kai choy, sliced carrots, cauliflower, broccoli, snowpeas, capsicum and mushrooms
  2. Remove vegetables and dip in cold water. Drain Water
  3. Heat 2 tablespoons of oil. Saute chopped garlic and sliced ginger until lightly brown
  4. Add in the vegetables and cook over high heat. Add in the seasoning ingredients and stir well. Thicken the sauce by adding in the cornflour mixture
  5. Remove from heat. Transfer to a casserole and serve hot.
