Ingredients
  • 2 Tbs Vegetable Oil
  • 2 Tbs Sesame Oil
  • 1 kg Chicken Breast Fillets, Cut into strips
  • 2 Tbs Soy Sauce
  • 2 Cloves Garlic
  • 4 Cm Fresh Ginger, cut into strips
  • 1 Red Capsicum, sliced into strips
  • 375 ml Chicken Stock
  • 2 Tbs Honey
  • 2 Tbs Sweet Chilli Sauce
  • 1 Tbs Corn Flour
  • 4 Shallots, sliced
Instructions
  1. Heat oils in a large pan. Add chicken to pan in batches and stir-fry 4-5 minutes or until lightly coloured. Remove and drain on paper towels.
  2. Add garlic, ginger and capsicum to pan, stir-fry 2-3 minutes.
  3. Whisk together stock, honey, chilli sauce, soy sauce and cornflour then pour into pan.
  4. Bring to the boil, reduce heat, return chicken to pan and simmer 10 minutes.
  5. Add shallots, stir through and serve.
