  • 650 g Sweet Potatoes, peeled and cut into 1-inch chunks
  • 2 cups Water
  • 1¾ cups Chicken Broth, vegetable will work also
  • 1 cup Half and Half
  • ¼ tsp Nutmeg
  • ¼ tsp Salt
  • ⅛ tsp Black Pepper, ground
  • ½ cup Sour Cream
  • 1 Tbs Fresh Dill, chopped
  1. In a large saucepan, bring the sweet potatoes, water and broth to a boil over a high heat. Reduce the heat to low and cook until tender - about 15 minutes.
  2. Transfer sweet potatoes and about 1 cup of broth to a blender or food processor. Reserve remaining broth mixture. Process sweet potato mixture until smooth; return to the saucepan with the remaining broth mixture.
  3. Add the half-and-half, nutmeg, salt and pepper. Bring just to a boil/ Divide among the soup owls; top each with some sour cream and dill and serve
