  • 1 Large Carrot
  • 2 Large Zucchini
  • 1 Small Onion
  • 60 g Feta Cheese
  • ¼ cup Flour
  • ½ tsp Poppy Seeds
  • ¼ tsp Cumin Powder
  • 1 tsp Curry Powder
  • 1 Tbs Parsley, chopped
  • 2 Whole Eggs
  • 30 g Butter
  • 2 Tbs Vegetable Oil
  • Salt and Pepper
  1. Grate the carrots, zucchini, onion and Feta cheese coarsely, either by hand or in a food processor
  2. Mix together the flour, cumin seeds, popply seeds, curry powder and parsley in a large bowl. Season well with salt and pepper
  3. Heat the butter and oil in a large frying pan. Place heaped tablespoonfuls of the vegetable mixture in the pan, flattening them slightly with the back of the spoon. Fry gently for about 2 minutes on each side until crisp and golden brown. Drain on paper towels and keep warm until all the mixture is used.
