Home Made Red Wine Kangaroo Skewers With Asparagus Spears & Rocket.

Ingredients
  • 500 grams Kangaroo Steak, cut into 2cm cubes
  • 1 Clove Garlic, finely chopped
  • 3 Tbs Olive Oil
  • 2 Tbs Red Wine
  • 1 tsp Brown Sugar
  • Sea Salt & Cracked Black Pepper (exclude salt if health conscious)
  • 8 Asparagus Spears, trimmed
  • Olive Oil
  • Lemon Juice
  • Rocket Leaves
Instructions
  1. Combine meat with garlic, oil, wine, brown sugar, salt and pepper in a bowl and marinated for 20 minutes. Set aside.
  2. Preheat BBQ hot plate or pan to high. Thread marinated meat on to bamboo skewers (leaving a little space between each piece of meat). Brush asparagus spears with oil and chargrill with kangaroo skewers for approx 2 minutes each side. Serve the skewers with asparagus and rocket and squeeze a little lemon juice over dish.
