  • 1 packet jam rollettes, (250 g )
  • 1 packet port wine or, (85 g ) cherry or
  • strawberry jelly
  • ½ cup marsala or sweet sherry
  • 1 large mango, peel, thinly slice
  • 200 g fresh cherries pitted
  • 1 can pear slices, (425 g ) drained
  • 1 cup cream, whipped
  • 2 Tbs strawberry jam, sieved
  • custard
  • ¼ cup custard powder
  • ¼ cup sugar
  • 1¼ cups milk
  • ¾ cup cream
  • 2 tsp vanilla essence
  • ⅓ cup thick pure cream
  1. Cut the rollettes into thirds, layer closely over the base and a little way up the side of a 2 litre glass bowl, so the swirls can be seen. Pile th e rest in the middle. Combine the jelly crystals, 1½ cups boiling water and Marsala in a jug and stir until dissolved. Spoon over the rollettes - the liquid should run down the side of the bowl to soak them, cover and refrigerate.
  2. TO MAKE THE CUSTARD. Put the custard powder and sugar in a pan. Gradually blend in the milk and cream and stir over medium heat until the mixture b oils and thickens. Stir in the vanilla essence. Cover the surface with plastic wrap to prevent a skin forming. Allow to cool before folding in the thick cream.
  3. Put a third of the fruit over the jam rollettes and spoon custard over the top. Put the remaining fruit over the custard, cover with plastic wrap and refrigerate until needed. Just before serving, spread whipped cream over the top. Put the jam in a paper icing bag, sealing the end. Snip off the tip and pipe fine lines over the trifle. To feather, drag with a fine skewer wiping the skewer clean each time.
